1/2 cup sour cream or Greek yogurt
1 tsp vanilla extract

Instructions
Prepare the Crumb Topping:
In a medium bowl, combine flour, brown sugar, granulated sugar, and cinnamon. Stir in melted butter until crumbly. Set aside.

In a separate large bowl, cream butter and sugar until fluffy. Beat in eggs, one at a time. Add sour cream and vanilla extract, mixing well.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in diced apples.

Spread cake batter evenly into the prepared baking dish.
Sprinkle the crumb topping evenly over the batter.
Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the cake cool in the pan for 10 minutes before slicing. Serve warm or at room temperature.
Notes
Use tart apples like Granny Smith for a balanced flavor.
Store leftovers in an airtight container at room temperature for up to 2 days.
For extra sweetness, drizzle with powdered sugar glaze or serve with whipped cream.
