  • 4 boneless, skinless chicken breasts, cubed
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add cubed chicken, season with salt, pepper, and Italian seasoning, and cook until browned, about 5-7 minutes.
  • In a separate bowl, combine heavy cream, Parmesan cheese, cream cheese, garlic, and sun-dried tomatoes.
  • Add fresh spinach to the skillet and cook until wilted, about 2 minutes.
  • Transfer chicken and spinach to a greased casserole dish. Pour the creamy mixture over the chicken, and top with shredded mozzarella cheese.
  • Bake for 20-25 minutes until cheese is melted and bubbly.
  • Let cool slightly before serving.

Notes

  • You can substitute frozen spinach if necessary, but make sure to drain it well.
