This Beef Lombardi Casserole is a flavorful and filling casserole made with seasoned ground beef, tender noodles, and a creamy tomato sauce, all topped with melted cheese.   • 1 lb ground beef
  • 1 small onion, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can tomato sauce (15 oz)
  • 2 cups cooked egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and ground beef, cooking until beef is browned. Drain excess fat.
  • Stir in diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5–10 minutes to let flavors combine.
  • In a large bowl, mix cooked egg noodles with sour cream and cottage cheese.
  • In a greased 9x13-inch baking dish, layer the noodle mixture, followed by the beef mixture.
  • Sprinkle shredded cheddar cheese evenly over the top.
  • Bake for 25–30 minutes, or until the cheese is bubbly and golden.
  • Let the casserole cool slightly before serving.
