Ingredients

  • Beef chuck (cubed)
  • Potatoes (peeled and cubed)
  • Carrots (sliced)
  • Celery (sliced)
  • Onion (diced)
  • Garlic (minced)
  • Beef broth
  • Tomato paste
  • Flour (for dredging)
  • Olive oil
  • Worcestershire sauce
  • Bay leaves
  • Thyme (fresh or dried)
  • Salt and pepper

Instructions

  • Prep Beef: Season beef cubes with salt and pepper, then dredge in flour.
  • Sear Beef: Heat olive oil in a large pot over medium heat. Sear the beef until browned on all sides, then remove and set aside.
  • Sauté Veggies: In the same pot, add diced onions, garlic, carrots, and celery. Cook until softened.
  • Add Broth and Simmer: Stir in tomato paste, Worcestershire sauce, beef broth, bay leaves, and thyme. Return the beef to the pot and bring to a boil. Reduce heat and simmer for 1.5-2 hours, or until the beef is tender.
  • Add Potatoes: In the last 30 minutes of cooking, add the cubed potatoes and cook until soft.
