Cattle Drive Casserole is a delicious, filling dish combining seasoned ground beef, potatoes, and cheese, making it an easy, crowd-pleasing meal. With layers of rich flavor and hearty ingredients, this casserole is great for a family dinner or a potluck, bringing classic comfort food to the table in just under an hour.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can Rotel tomatoes with green chilies (10 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 4 cups frozen tater tots (or sliced potatoes)
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until softened. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in diced tomatoes, Rotel, taco seasoning, salt, and pepper. Simmer for 5 minutes.
  4. In a bowl, mix cream of mushroom soup and sour cream. Add this to the beef mixture and stir until combined.
  5. In a greased 9x13-inch baking dish, layer the beef mixture on the bottom. Top with a layer of tater tots or sliced potatoes.
  6. Sprinkle shredded cheddar cheese on top.
  7. Bake for 30–35 minutes, until bubbly and cheese is melted and golden.
  8. Let cool for a few minutes before serving.

 

Notes

  • For added spice, use hot Rotel or add diced jalapeños.
  • Substitute tater tots with mashed potatoes or sliced potatoes for a different texture.
  • This casserole freezes well and can be reheated for a quick meal.
