  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup milk
  • ¼ cup sour cream
  • ¼ cup chopped green onions
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon baking powder
  • ½ cup all-purpose flour

Instructions

  • Preheat oven to 400°F (200°C) and grease a muffin tin.
  • In a large bowl, mix mashed potatoes, cheese, eggs, milk, and sour cream.
  • Stir in green onions, garlic powder, salt, pepper, baking powder, and flour until well combined.
  • Spoon the mixture into the muffin tin, filling each cup about ¾ full.
