  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 can (13.5 oz) full-fat coconut milk
  • Zest of 1 lime
  • Juice of 2 limes
  • 3 garlic cloves, minced
  • 1 tablespoon honey (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh chopped cilantro, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 5-6 minutes per side or until golden and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
  4. Pour in the coconut milk, lime zest, and lime juice. Stir to combine, and bring to a simmer.
  5. Add honey and red pepper flakes if using. Simmer for 3-5 minutes until the sauce slightly thickens.
  6. Return the chicken to the skillet, spooning the sauce over the chicken. Simmer for another 2-3 minutes until heated through.
  7. Garnish with fresh chopped cilantro and serve hot with rice or your favorite side dish.
