This Creamy Lemon Ricotta Pasta is a quick and delicious meal featuring fresh ricotta cheese, zesty lemon, and perfectly cooked pasta. With its creamy texture and citrusy flavor, this easy recipe is perfect for a light yet satisfying dinner.

Ingredients

  • 12 oz pasta (spaghetti, fettuccine, or penne)
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 lemon (zested and juiced)
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup pasta water (reserved)

 

  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
  2. In a large bowl, mix ricotta, Parmesan, olive oil, lemon zest, lemon juice, salt, and pepper.
  3. Add hot pasta to the bowl and toss to coat. Use reserved pasta water to loosen the sauce if needed.
  4. Sprinkle with red pepper flakes and fresh herbs before serving.

Notes

  • Use whole milk ricotta for extra creaminess.
  • Add grilled chicken or shrimp for protein.

 

  • Substitute Parmesan with Pecorino Romano for a sharper flavor.
