This creamy potato & hamburger soup is a rich, comforting dish loaded with hearty potatoes, seasoned ground beef, and a velvety broth. Perfect for a cozy dinner, this one-pot soup is easy to make and full of flavor.

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken or beef broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Shredded cheese and chopped parsley (for garnish)

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Remove and set aside.
  • In the same pot, melt the butter, then sauté onions and garlic until fragrant.
  • Sprinkle in the flour and stir for 1-2 minutes to form a roux.
  • Slowly whisk in the broth, ensuring no lumps remain. Add the potatoes, thyme, salt, and pepper. Simmer until the potatoes are tender.
  • Stir in the milk, cream, and cooked ground beef. Simmer for an additional 5 minutes.
  • Adjust seasoning as needed and serve garnished with cheese and parsley.

Notes

  • For a thicker consistency, mash some of the potatoes in the soup.
  • You can substitute ground turkey or chicken for a lighter version.
