  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 tsp red chili flakes (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add vodka to the skillet, let it simmer for 2-3 minutes to reduce slightly.
  5. Pour in the crushed tomatoes and chili flakes (if using). Season with salt and pepper. Simmer for 10 minutes.
  6. Lower the heat and slowly stir in heavy cream. Simmer for another 2-3 minutes until the sauce thickens.
  7. Add the cooked pasta to the skillet, tossing to coat. If needed, use reserved pasta water to adjust the consistency.
  8. Sprinkle Parmesan cheese over the pasta and toss again. Garnish with fresh basil leaves.
