  • 2 boneless, skinless chicken breasts
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta, cooked
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • 1/4 cup chopped parsley (for garnish)

Instructions

  • Season chicken breasts with Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
  • Heat olive oil in a skillet over medium-high heat and sear chicken for 2 minutes on each side.
  • Transfer chicken to the crock pot and add chicken broth, heavy cream, and diced tomatoes with green chilies.
  • Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken is tender.
  • Shred the chicken using two forks. Stir in Parmesan cheese and mozzarella cheese.
  • If the sauce needs thickening, mix cornstarch and water, then add to the crock pot. Stir and cook for another 15 minutes.
  • Add cooked penne pasta and stir to combine.
  • Garnish with chopped parsley and serve warm

  • Use any pasta of your choice, such as fettuccine or rotini.
