2 boneless, skinless chicken breasts
1 cup long-grain white rice
2 cups chicken broth
1 cup heavy cream
2 cups shredded cheddar cheese
2 cups broccoli florets
1 can (10.5 oz) cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
Instructions
Place chicken breasts in the crockpot.
Add rice, chicken broth, heavy cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir to combine.
Cover and cook on LOW for 4-5 hours or until chicken is cooked through and rice is tender.
Remove chicken, shred with two forks, and return to the crockpot.
Stir in broccoli and shredded cheese, then cover and cook for another 30 minutes until broccoli is tender and cheese is melted.
Serve warm and enjoy!
Notes
Use fresh or frozen broccoli. If using frozen, thaw before adding.
For extra flavor, add a dash of paprika or cayenne pepper.
Substitute brown rice, but increase cooking time by 1 hour.
