  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 cups broccoli florets
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Place chicken breasts in the crockpot.
  • Add rice, chicken broth, heavy cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir to combine.
  • Cover and cook on LOW for 4-5 hours or until chicken is cooked through and rice is tender.
  • Remove chicken, shred with two forks, and return to the crockpot.
  • Stir in broccoli and shredded cheese, then cover and cook for another 30 minutes until broccoli is tender and cheese is melted.
  • Serve warm and enjoy!

Notes

  • Use fresh or frozen broccoli. If using frozen, thaw before adding.
  • For extra flavor, add a dash of paprika or cayenne pepper.
  • Substitute brown rice, but increase cooking time by 1 hour.
