This Bruschetta Chicken Pasta recipe is a perfect combination of tender chicken, pasta, juicy tomatoes, garlic, and fresh basil.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or spaghetti)
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Balsamic glaze, for drizzling

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet over medium heat. Cook chicken until golden and fully cooked (about 4-5 minutes per side). Remove and slice.
  4. In the same skillet, add garlic and cherry tomatoes. Sauté for 2-3 minutes until tomatoes soften.
  5. Add cooked pasta to the skillet and toss with the tomato mixture.
  6. Stir in fresh basil and sliced chicken. Mix well.
  7. Top with Parmesan cheese and drizzle balsamic glaze before serving.

  • Substitute whole wheat pasta or gluten-free pasta if desired.
