2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1/2 tsp chili powder
4 large flour tortillas
1 cup shredded cheddar cheese
1/2 cup cooked rice
1/2 cup black beans, drained and rinsed
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup chopped cilantro
1/2 cup shredded lettuce
1/4 cup sour cream
1/4 cup chipotle ranch dressing
Instructions
Preheat grill to medium-high heat.
Rub chicken with olive oil and season with paprika, garlic powder, salt, pepper, cumin, and chili powder.
Grill chicken for 6-7 minutes per side until fully cooked. Remove and let rest before slicing.
Warm tortillas on the grill or in a pan for about 30 seconds per side.
Spread chipotle ranch dressing over each tortilla.
Layer sliced grilled chicken, cheese, rice, black beans, tomatoes, red onion, cilantro, and lettuce.
Drizzle with sour cream and roll burritos tightly.
Grill the burritos for 1-2 minutes per side until golden and crisp.
