Instructions

  1. Cook the ground beef:
    In a large pot, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat and set the beef aside.
  2. Cook the vegetables:
    In the same pot, melt the butter over medium heat. Add the diced onions and minced garlic, cooking for 2-3 minutes until softened. Stir in the diced potatoes, carrots, garlic powder, paprika, salt, and pepper.
  3. Simmer the soup:
    Pour in the chicken or beef broth and bring the mixture to a boil. Reduce heat and simmer for 10-12 minutes, or until the potatoes are tender.
  4. Make the creamy base:
    In a separate small saucepan, melt 3 tablespoons of butter over medium heat. Whisk in the flour to create a roux and cook for 1-2 minutes. Slowly whisk in the milk, stirring continuously until thickened, about 3-4 minutes.
  5. Combine and add cheese:
    Stir the milk mixture into the soup pot with the cooked potatoes and carrots. Add the cooked ground beef back in and simmer for another 5 minutes. Gradually stir in the shredded cheddar cheese and sour cream until melted and creamy.
