1 tbsp olive oil
2 medium yellow onions, thinly sliced
2 lbs ground beef
1 cup breadcrumbs
2 eggs
1 cup shredded mozzarella cheese
1/2 cup beef broth
2 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet, add onions, and cook until caramelized (about 20 minutes). Set aside to cool.
In a large bowl, combine ground beef, breadcrumbs, eggs, 1/2 cup mozzarella cheese, beef broth, Worcestershire sauce, garlic powder, onion powder, thyme, salt, and pepper. Mix well.
Fold in the cooled caramelized onions.
Shape the mixture into a loaf and place in a greased loaf pan or on a baking sheet.
Bake for 45 minutes.
Sprinkle the remaining mozzarella cheese on top and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
