This French Onion Meatloaf recipe combines caramelized onions, juicy beef, and melted cheese for a savory, comforting dish. Perfect for family dinners or special occasions!

  • 1 tbsp olive oil
  • 2 medium yellow onions, thinly sliced
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup beef broth
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet, add onions, and cook until caramelized (about 20 minutes). Set aside to cool.
  • In a large bowl, combine ground beef, breadcrumbs, eggs, 1/2 cup mozzarella cheese, beef broth, Worcestershire sauce, garlic powder, onion powder, thyme, salt, and pepper. Mix well.
  • Fold in the cooled caramelized onions.
  • Shape the mixture into a loaf and place in a greased loaf pan or on a baking sheet.
  • Bake for 45 minutes.
  • Sprinkle the remaining mozzarella cheese on top and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let the meatloaf rest for 10 minutes before slicing and serving.

  • For added flavor, top the meatloaf with extra caramelized onions or a drizzle of gravy.
  • Use ground turkey or chicken as a substitute for beef for a leaner version.
