Ground beef enchiladas are a classic Mexican dish filled with seasoned ground beef, melty cheese, and rich enchilada sauce. Perfect for an easy weeknight dinner or a flavorful gathering with family, this recipe is quick, satisfying, and sure to please everyone at the table.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (10 oz) red enchilada sauce
  • 8 flour tortillas (8-inch size)
  • 2 cups shredded cheddar or Mexican cheese blend
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes, sliced olives

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet over medium heat, cook ground beef until browned. Add onion and garlic; sauté until softened.
  • Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Mix well and remove from heat.
  • Spread 1/4 cup enchilada sauce on the bottom of a 9x13-inch baking dish.
  • Fill each tortilla with the ground beef mixture and a sprinkle of cheese, then roll up tightly.
  • Place rolled tortillas seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Bake for 20-25 minutes, until bubbly and cheese is melted.
  • Serve warm with your favorite toppings.

Notes

  • For extra heat, add diced jalapeños to the beef mixture.
  • Use corn tortillas instead of flour for a gluten-free option.
  • Enchiladas can be prepped ahead of time and baked just before serving.
