This Ground Beef Stroganoff recipe is a quick and delicious version of the classic comfort dish, featuring seasoned ground beef, mushrooms, and a rich sour cream sauce. Served over egg noodles, it’s a hearty meal that’s perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 12 oz egg noodles, cooked
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the beef:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add ground beef and cook for 5-7 minutes, breaking it apart, until browned. Drain excess fat and set the beef aside.
  • Cook the vegetables:
In the same skillet, add the remaining olive oil. Sauté the diced onion, minced garlic, and sliced mushrooms for 4-5 minutes until the vegetables are softened.
  • Make the sauce:
Sprinkle flour over the onion and mushroom mixture and stir to combine. Slowly pour in the beef broth while stirring. Add Worcestershire sauce, paprika, salt, and pepper. Simmer for 5 minutes, allowing the sauce to thicken.
  • Add the beef and sour cream:
Return the cooked ground beef to the skillet and stir it into the sauce. Remove the skillet from heat and stir in the sour cream until the sauce is creamy and well-combined.
  • Serve:
Serve the beef stroganoff over cooked egg noodles, and garnish with fresh parsley if desired.

Notes

  • For a lighter option, substitute ground turkey or chicken.
  • You can use Greek yogurt instead of sour cream for a tangier flavor.
