  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts (cubed)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 2 medium carrots (sliced)
  • 2 celery stalks (sliced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken and cook until golden, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  • Add chicken broth, heavy cream, Parmesan cheese, oregano, thyme, red pepper flakes, and cooked chicken. Stir to combine.
  • Bring to a boil, then reduce to a simmer. Let cook for 20 minutes, stirring occasionally.
  • Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

  • For a thicker soup, add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) during the simmering process.
