2 tbsp olive oil
1 lb boneless, skinless chicken breasts (cubed)
1 medium onion (diced)
3 garlic cloves (minced)
2 medium carrots (sliced)
2 celery stalks (sliced)
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add chicken and cook until golden, about 5-7 minutes. Remove and set aside.
In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
Add chicken broth, heavy cream, Parmesan cheese, oregano, thyme, red pepper flakes, and cooked chicken. Stir to combine.
Bring to a boil, then reduce to a simmer. Let cook for 20 minutes, stirring occasionally.
Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
For a thicker soup, add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) during the simmering process.
