Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 2 large eggs
  • Toppings (optional): berries, chocolate, caramel sauce

Instructions

  • Preheat the oven to 325°F (165°C). Line a muffin tin with paper liners.
  • Mix graham cracker crumbs with melted butter. Press about 1 tbsp of the mixture into the bottom of each liner.
  • In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, beating until combined.
  • Spoon cream cheese mixture over each crust, filling each cup nearly full.
  • Bake for 15-18 minutes, until centers are set. Let cool, then refrigerate for 2 hours.
  • Top with desired toppings before serving.

Notes

  • Ensure cream cheese is softened to avoid lumps.
  • Cheesecakes will slightly sink after cooling; this is normal.
  • Store in an airtight container in the refrigerator for up to 4 days.
