  • 2 boneless, skinless chicken breasts (cubed)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • ½ cup sun-dried tomatoes (chopped)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 8 oz penne pasta
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter
  • ¼ cup fresh basil (chopped)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken, season with salt and pepper, and cook until golden brown. Remove and set aside.
  • In the same pot, add butter, garlic, red pepper flakes, and Italian seasoning. Sauté until fragrant.
  • Stir in sun-dried tomatoes, chicken broth, heavy cream, and pasta. Bring to a simmer.
  • Cover and cook for about 12-15 minutes, stirring occasionally, until pasta is tender.
  • Add cooked chicken and parmesan cheese. Stir until cheese melts and sauce thickens.
  • Garnish with fresh basil and serve hot.

Notes

  • Substitute heavy cream with half-and-half for a lighter version.
  • Use rotisserie chicken for an even quicker meal.
  • Adjust spice level by adding more or less red pepper flakes.
