  • 4 large potatoes, sliced
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 onion, diced
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook the ground beef and diced onions until the beef is browned. Drain excess fat.
  3. Stir in taco seasoning, tomatoes with chilies, and simmer for 5 minutes.
  4. In a greased casserole dish, layer half of the sliced potatoes, ground beef mixture, and cheese. Repeat layers.
  5. Cover with foil and bake for 45-50 minutes, until potatoes are tender.
  6. Remove foil, top with sour cream and additional cheese, and bake uncovered for 10 more minutes.
  7. Garnish with chopped green onions and serve.
