4 cod fillets (about 6 oz each)
1 can (13.5 oz) full-fat coconut milk
2 tbsp fresh lemon juice
1 tbsp lemon zest
2 cloves garlic, minced

1 tbsp fresh parsley, chopped (for garnish)
