1 medium onion, diced
3 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
2 cups cooked chicken, shredded
4 cups chicken broth
1 cup heavy cream
1 teaspoon Italian seasoning
1/4 teaspoon nutmeg
Salt and pepper, to taste
1 package (16 oz) potato gnocchi
2 cups fresh spinach, chopped
Instructions
Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened (5-7 minutes).
Add chicken broth, heavy cream, Italian seasoning, nutmeg, salt, and pepper. Bring to a simmer.
