This Apple Pecan Cake with Caramel Glaze is a deliciously moist dessert packed with fall flavors. Fresh apples and crunchy pecans combine in a spiced cake that’s draped in a sweet caramel glaze, making it the perfect treat for gatherings or any cozy evening at home.

  • Cake:

    • 2 cups all-purpose flour
    • 1 ½ cups granulated sugar
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • ½ tsp salt
    • 1 cup vegetable oil
    • 2 large eggs
    • 2 cups chopped apples (peeled)
    • 1 cup chopped pecans
  • Caramel Glaze:

    • ½ cup brown sugar
    • ¼ cup butter
    • 2 tbsp milk
    • ½ tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
  • In a bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  • In a separate bowl, beat together oil and eggs, then add to the dry ingredients and stir until just combined.
  • Fold in apples and pecans.
  • Pour the batter into the prepared baking dish and bake for 45-50 minutes, or until a toothpick comes out clean.
  • While the cake cools slightly, prepare the caramel glaze. In a small saucepan over medium heat, melt brown sugar, butter, and milk, stirring until smooth. Remove from heat and stir in vanilla.
  • Pour the caramel glaze over the warm cake. Let it cool slightly, then slice and serve.

Notes

  • Substitute walnuts if pecans aren’t available.
  • For an extra apple flavor, try adding a teaspoon of apple pie spice.
