This BBQ Bacon Cheeseburger Meatloaf recipe combines juicy ground beef, crispy bacon, cheddar cheese, and tangy BBQ sauce for a flavorful meatloaf twist. It’s a delicious and hearty dinner that’s perfect for cheeseburger lovers.

  • 1 1/2 lbs ground beef (80/20)
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup BBQ sauce (plus more for topping)
  • 2 eggs
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp parsley (optional for garnish)

Instructions

  • Preheat oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper.
  • In a large bowl, combine ground beef, crumbled bacon, cheddar cheese, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, Dijon mustard, salt, and pepper.
  • Add 1/4 cup of BBQ sauce to the mixture and mix until just combined. Do not overmix.
  • Transfer the meat mixture into the loaf pan and form it into a loaf shape. Spread an additional layer of BBQ sauce on top.
  • Bake for 50-60 minutes until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 5 minutes before slicing. Garnish with parsley and extra bacon bits if desired.

Notes

  • For extra flavor, top with more shredded cheddar in the last 10 minutes of baking.
  • Serve with mashed potatoes, coleslaw, or roasted vegetables for a complete meal.
