  • 4 medium russet potatoes, diced

  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the potatoes:
    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until they are golden brown and crispy. Remove potatoes from the skillet and set aside.
  • Cook the ground beef:
    In the same skillet, heat the remaining tablespoon of olive oil. Add the diced onion and garlic, and cook for 2-3 minutes until softened. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Season and combine:
    Stir in garlic powder, onion powder, paprika, thyme, salt, and pepper. Return the cooked potatoes to the skillet and toss everything together until well combined. Cook for an additional 3-4 minutes to let the flavors meld.
  • Add cheese (optional):
    If using, sprinkle shredded cheddar cheese over the top. Cover the skillet and cook for 2 minutes, or until the cheese is melted.
  • Serve hot:
    Garnish with fresh parsley if desired, and serve hot with your favorite sides or as a complete meal.
