This beef enchiladas recipe features ground beef, spices, tortillas, and cheese, creating a hearty, flavorful dish perfect for dinner.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (10 oz) red enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar cheese or Mexican cheese blend
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned, breaking it into crumbles. Drain excess grease.
  • Add the diced onion and garlic, cooking until softened, about 2-3 minutes.
  • Stir in chili powder, cumin, paprika, salt, and pepper. Mix well and cook for 1 minute.
  • Spread 1/4 cup of enchilada sauce in the bottom of a 9x13-inch baking dish.
  • Divide the beef mixture evenly among tortillas, roll them up, and place them seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the tortillas and sprinkle with shredded cheese.
  • Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until cheese is melted and bubbly.
  • Garnish with fresh cilantro and serve.

Notes

  • You can substitute ground beef with turkey or chicken for a lighter version.
  • Serve with sour cream, guacamole, or salsa on the side.
