  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1/4 cup water
  • 8 flour tortillas (8-inch size)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 2 tablespoons olive oil or butter (for cooking)
  • Salsa, sour cream, and guacamole for serving
  • Optional toppings: diced tomatoes, jalapeños, onions, and cilantro

Instructions

  • Cook the ground beef:
    In a large skillet over medium heat, brown the ground beef for 5-7 minutes until fully cooked. Drain excess fat. Stir in taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes until the sauce thickens. Remove from heat.
  • Assemble the quesadillas:
    Lay one tortilla flat and sprinkle 1/4 cup of shredded cheese evenly over half of the tortilla. Add a spoonful of the seasoned beef on top of the cheese. Sprinkle a little more cheese on top of the beef, then fold the tortilla in half.
  • Cook the quesadillas:
    Heat 1/2 tablespoon of olive oil or butter in a skillet over medium heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes per side, until the tortilla is golden brown and crispy, and the cheese is melted.
  • Serve:
    Slice the quesadilla into wedges and serve hot with salsa, sour cream, guacamole, and any desired toppings.

  • You can customize your quesadillas by adding sautéed onions, bell peppers, or black beans to the filling.
