¼ cup cottage cheese
1 tbsp honey or sweetener of choice
¼ tsp cream of tartar
¼ cup fresh blueberries
½ tsp vanilla extract
Instructions
Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a bowl, beat egg whites with cream of tartar until stiff peaks form.
In another bowl, mix egg yolks, cottage cheese, honey, and vanilla until smooth.
Gently fold the egg white mixture into the yolk mixture until combined.
Carefully fold in blueberries.
Spoon the batter onto the baking sheet into small rounds.
