Ingredients

Scale
  • 2 cups cooked chicken, shredded or cubed
  • 3 cups fresh broccoli florets
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crushed Ritz crackers (optional)
  • 2 tablespoons melted butter (optional, for cracker topping)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large mixing bowl, combine the cream of chicken soup, mayonnaise, shredded cheddar cheese, Parmesan cheese, garlic powder, salt, and black pepper. Mix well.
  • Add the cooked chicken and broccoli florets to the bowl. Stir until everything is evenly coated.
  • Transfer the mixture to the prepared baking dish and spread it out evenly.
  • If desired, mix the crushed Ritz crackers with melted butter and sprinkle over the casserole.
  • Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes

  • You can use frozen broccoli; just thaw and drain well before adding.
  • For a lighter version, substitute Greek yogurt for the mayonnaise.
  • Feel free to add cooked rice or pasta to make it a more filling meal.
