  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp olive oil
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp chili flakes (optional)
  • Juice of ½ lemon

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onions, garlic, carrots, and celery. Sauté until softened.
  • Stir in bell pepper, cabbage, diced tomatoes, and spices.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 20–25 minutes until vegetables are tender.
  • Stir in lemon juice before serving.
