  • 1 lb boneless, skinless chicken breasts, sliced

  • 1 tbsp Cajun seasoning

  • 1 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small red onion, sliced

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Instructions

  1. Toss the chicken slices with Cajun seasoning until evenly coated.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add the chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.

  4. In the same skillet, add a bit more oil if needed and sauté bell peppers and onion for 4-5 minutes until tender-crisp.

  5. Add minced garlic and cook for another 30 seconds.

  6. Return the chicken to the skillet, stir to combine, and heat through.

  7. Season with salt and pepper as needed. Garnish with fresh parsley if desired.

Notes

  • Adjust Cajun seasoning to taste if you prefer milder or spicier flavor.

  • Great served over rice, cauliflower rice, or in tortillas for wraps.

 

  • You can substitute chicken thighs for extra juiciness.
