  • 1 medium onion, diced
  • 6 large eggs
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 4 cups frozen hash browns, thawed
  • 1 1/2 cups cottage cheese
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, beat the eggs. Add cheddar, mozzarella, cottage cheese, hash browns, sautéed and onion. Season with salt and pepper, then mix well.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 40-45 minutes or until the top is golden brown and the center is set.
  • Let it cool for a few minutes before serving.
