These Cheesy Beef Fiesta Wraps feature seasoned ground beef, melted cheese, and vibrant toppings wrapped in soft tortillas. Perfect for a quick lunch or dinner, these wraps are packed with Mexican-inspired flavors and can be customized with your favorite ingredients like salsa, sour cream, and avocado.

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/4 cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • 8 flour tortillas (8-inch size)
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped lettuce
  • 1/4 cup diced onions
  • 1 avocado, sliced (optional)
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the ground beef:
In a large skillet, heat olive oil over medium heat. Add ground beef and cook for 5-7 minutes, breaking it up as it browns. Drain excess fat if needed.
  2. Season the beef:
Stir in taco seasoning and 1/4 cup water. Simmer for 2-3 minutes until the beef is well coated and the sauce thickens. Remove from heat.
  3. Assemble the wraps:
Lay each tortilla flat and spread a spoonful of salsa and sour cream on each. Divide the seasoned beef evenly between the tortillas, placing it in the center of each one. Top with shredded cheese, lettuce, diced tomatoes, onions, and avocado slices.
  4. Wrap it up:
Fold the sides of each tortilla over the filling, then roll from the bottom up to create a wrap.
  5. Optional step – toast the wraps:
For a crispy finish, toast each wrap in a hot skillet for 1-2 minutes per side, until the tortilla is golden brown and the cheese inside is melted.
  6. Serve hot:
Garnish with fresh cilantro if desired and serve with extra salsa, guacamole, or chips on the side.

Notes

  • Add jalapeños or hot sauce for extra spice.
  • Use whole wheat or spinach tortillas for a healthier option.
  • You can also add rice or black beans to make the wraps more filling.
