Ingredients

Scale
  • 2 cups cooked chicken (shredded or cubed)
  • 3 cups cooked pasta (penne, rotini, or your choice)
  • 2 cups shredded cheddar cheese
  • 1/2 cup Parmesan cheese
  • 2 cups milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup peas or spinach (optional, for extra veggies)
  • 2 tbsp olive oil (for cooking)

Instructions

  • In a large skillet, heat olive oil over medium heat. Add the cooked chicken and sauté until lightly browned, about 3–4 minutes. Set aside.
  • In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to create a roux.
  • Gradually whisk in the milk, stirring constantly to avoid lumps. Cook for 3–4 minutes until the sauce thickens.
  • Stir in garlic powder, onion powder, salt, and pepper.
  • Add shredded cheddar and Parmesan cheese, stirring until melted and smooth.
  • Add cooked pasta and chicken to the cheese sauce, stirring to combine.
  • (Optional) Stir in peas or spinach for added vegetables.
  • Cook for an additional 2–3 minutes until heated through and creamy.
  • Serve hot and enjoy!

Notes

  • You can swap cheddar with mozzarella or a blend of cheeses for variety.
  • For extra flavor, add red pepper flakes or a pinch of smoked paprika.
  • Leftovers can be stored in the fridge for up to 3 days.
