4 chicken breasts
1 cup mushrooms, finely chopped
1 cup shredded mozzarella cheese
2 tbsp cream cheese, softened
3 cloves garlic, minced
3 tbsp unsalted butter
1 tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil
Instructions
Preheat oven to 375°F (190°C).
Slice chicken breasts horizontally to create a pocket, being careful not to cut through.
In a bowl, mix mushrooms, mozzarella, cream cheese, and Italian seasoning. Stuff each chicken breast with this mixture.
Secure the openings with toothpicks.
Season the chicken with salt and pepper.
Heat olive oil in a skillet over medium heat. Sear the chicken for 3 minutes on each side until golden.
Transfer the chicken to a baking dish.
In the same skillet, melt butter, add minced garlic, and sauté for 1-2 minutes. Pour the garlic butter over the chicken.
Bake in the oven for 20-25 minutes or until the chicken is fully cooked.
