  • 1 cup mushrooms, finely chopped
  • 1 cup shredded mozzarella cheese
  • 2 tbsp cream cheese, softened
  • 3 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice chicken breasts horizontally to create a pocket, being careful not to cut through.
  • In a bowl, mix mushrooms, mozzarella, cream cheese, and Italian seasoning. Stuff each chicken breast with this mixture.
  • Secure the openings with toothpicks.
  • Season the chicken with salt and pepper.
  • Heat olive oil in a skillet over medium heat. Sear the chicken for 3 minutes on each side until golden.
  • Transfer the chicken to a baking dish.
  • In the same skillet, melt butter, add minced garlic, and sauté for 1-2 minutes. Pour the garlic butter over the chicken.
  • Bake in the oven for 20-25 minutes or until the chicken is fully cooked.
