Instructions

  • Preheat oven to 350°F (175°C).
  • Cook the ground beef:
    In a large skillet, heat olive oil over medium heat. Add ground beef and diced onion, cooking until the beef is browned and the onions are soft, about 5-7 minutes. Drain excess fat.
  • Add garlic and seasonings:
    Stir in minced garlic, garlic powder, onion powder, paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
  • Mix in liquids and rice:
    Add beef broth, cream of mushroom soup, and drained diced tomatoes. Stir in the uncooked rice. Simmer for 5 minutes, allowing the flavors to combine.
  • Transfer to casserole dish:
    Pour the beef and rice mixture into a greased 9x13-inch casserole dish. Cover with foil and bake for 25 minutes.
  • Add the cheese:
    After 25 minutes, remove the foil, sprinkle shredded cheddar cheese evenly over the casserole, and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  • Garnish and serve:
    Let the casserole cool for a few minutes before garnishing with fresh parsley, if desired, and serving.
