    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1/2 cup breadcrumbs
    • 1 egg, beaten
    • 1/4 cup milk
    • 1 tablespoon Worcestershire sauce

    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
  • For the Mashed Potatoes:
    • 4 cups mashed potatoes (pre-cooked or homemade)
    • 1/2 cup sour cream
    • 1/4 cup milk
    • Salt and pepper to taste
  • For Topping:
    • 1 1/2 cups shredded cheddar cheese
    • 1/4 cup cooked bacon bits (optional)
    • 2 tablespoons fresh chives or green onions, chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Prepare the meatloaf mixture:
    In a large bowl, combine ground beef, diced onion, garlic, breadcrumbs, beaten egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Press the meatloaf into the dish:
    Press the meatloaf mixture evenly into the bottom of the greased baking dish. Bake for 25-30 minutes, or until the meat is fully cooked.
  4. Prepare the mashed potatoes:
    While the meatloaf is baking, mix the pre-cooked mashed potatoes with sour cream, milk, salt, and pepper until creamy. Set aside.
  5. Top with mashed potatoes and cheese:
    Once the meatloaf is cooked, spread the creamy mashed potatoes evenly over the meatloaf layer. Sprinkle shredded cheddar cheese on top, followed by cooked bacon bits (optional).
  6. Bake the casserole:
    Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish and serve:
