Ingredients

Scale
  • 2 cups pasta (e.g., penne or shells)
  • 1 lb ground beef or chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp taco seasoning

  • 1/4 cup water or broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro, for garnish

Instructions

  • Cook the pasta according to the package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent.
  • Add ground meat to the skillet, cooking until browned. Stir in minced garlic and cook for 1 minute.
  • Sprinkle taco seasoning over the meat and mix well. Add tomato sauce and water or broth, stirring to combine.
  • Simmer the mixture for 5 minutes, allowing the flavors to meld.
  • Stir in cooked pasta, then mix in shredded cheddar cheese until melted and creamy.
  • Remove the skillet from heat and fold in sour cream for extra creaminess.

Notes

  • You can substitute ground beef with ground chicken or turkey.
  • Adjust the spice level by adding more or less taco seasoning.
