1 lb ground beef or chicken
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
2 tbsp taco seasoning
1 cup tomato sauce
1/4 cup water or broth
1 cup shredded cheddar cheese
1/2 cup sour cream
Fresh cilantro, for garnish
Instructions
Cook the pasta according to the package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent.
Add ground meat to the skillet, cooking until browned. Stir in minced garlic and cook for 1 minute.
Sprinkle taco seasoning over the meat and mix well. Add tomato sauce and water or broth, stirring to combine.
Simmer the mixture for 5 minutes, allowing the flavors to meld.
Stir in cooked pasta, then mix in shredded cheddar cheese until melted and creamy.
Remove the skillet from heat and fold in sour cream for extra creaminess.

Notes
You can substitute ground beef with ground chicken or turkey.
