1 lb fresh salmon, cooked and flaked
1/2 cup finely diced celery
1/4 cup minced green onions
1/4 cup chopped fresh parsley
1 large egg
1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tsp lemon juice
Salt and pepper to taste
1 cup panko breadcrumbs
2 tbsp olive oil (for frying)
In a large bowl, mix together flaked salmon, celery, green onions, parsley, egg, mayonnaise, mustard, lemon juice, salt, and pepper.
Stir in half of the panko breadcrumbs until the mixture holds together.
Shape into 6-8 patties and coat with remaining panko.
