Cherry Almond Linzer Cookies are a delicious twist on the classic Linzer recipe. These cookies feature a nutty almond flavor paired with sweet cherry preserves, making them perfect for holidays or special occasions. The crumbly texture and fruit filling offer a satisfying bite every time.

  • 1 1/2 cups almond flour
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup cherry preserves
  • Powdered sugar, for dusting

Instructions

  • Whisk almond flour, all-purpose flour, cinnamon, and salt.
  • In another bowl, beat butter and sugar until creamy. Add egg yolk, vanilla, and almond extract.
  • Gradually mix in dry ingredients until dough forms. Chill for 30 minutes.
  • Roll out dough and cut into shapes with cookie cutters. Cut out centers of half of the cookies.
  • Bake at 350°F for 10-12 minutes until edges are golden.
  • Spread cherry preserves on the whole cookies, top with the cut-out cookies. Dust with powdered sugar.

Notes

For best results, chill the dough thoroughly before rolling to ensure crisp edges.
