This Chicken Cordon Bleu Meatloaf is a delicious twist on the classic dish, packed with layers of ground chicken, ham, and gooey Swiss cheese. Perfect for a flavorful family dinner or meal prep!

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 6 slices deli ham
  • 6 slices Swiss cheese
  • 2 tbsp Dijon mustard
  • 1/4 cup Parmesan cheese (grated)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine ground chicken, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Spread half of the chicken mixture into a greased loaf pan.
  • Layer the ham slices on top of the chicken mixture, followed by the Swiss cheese slices.
  • Spread the Dijon mustard over the cheese layer.
  • Add the remaining chicken mixture, pressing it down evenly to cover the layers.
  • Sprinkle grated Parmesan cheese over the top.
  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For extra flavor, add a sprinkle of smoked paprika to the chicken mixture.
  • Serve with a side of steamed vegetables or mashed potatoes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
