  • 2 cups shredded cooked chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup bell pepper, diced
  • 1/4 cup tomato sauce
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 pack of empanada dough or pastry dough
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté onions, garlic, and bell peppers until softened.
  3. Add shredded chicken, tomato sauce, cumin, paprika, chili powder, salt, and pepper. Stir and cook for 5 minutes.
  4. Roll out the empanada dough, cut into circles.
  5. Spoon chicken mixture onto the dough, fold, and seal edges with a fork.
  6. Brush with egg wash and bake for 20-25 minutes until golden brown.
  7. Let cool slightly before serving.
