  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup white wine
  • Juice of 2 lemons
  • Fresh parsley, chopped (for garnish)

Instructions

  • Pound chicken breasts to even thickness. Season with salt and pepper.
  • Dredge the chicken in flour, shaking off excess.
  • In a shallow bowl, beat eggs with Parmesan.
  • Heat butter and olive oil in a skillet over medium heat.
  • Dip floured chicken into egg mixture and fry until golden, 4-5 minutes per side.
  • Remove chicken and keep warm.
  • In the same pan, add chicken broth, white wine, and lemon juice. Simmer for 5 minutes.
  • Return chicken to the pan, simmer for 2-3 minutes.
  • Garnish with fresh parsley before serving.
