  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 4 slices provolone cheese
  • 4 hoagie rolls
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Mayonnaise (optional)
  • 2 tablespoons butter (for toasting rolls)

Instructions

  1. Season the chicken:
    Season thinly sliced chicken with garlic powder, onion powder, paprika, salt, and pepper.
  2. Cook the vegetables:
    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced bell peppers and onions, cooking until softened and lightly caramelized, about 5-7 minutes. Remove from skillet and set aside.
  3. Cook the chicken:
    In the same skillet, add the remaining olive oil. Add the seasoned chicken and cook for 5-6 minutes, until browned and cooked through. Stir occasionally.
  4. Combine and melt cheese:
    Return the cooked peppers and onions to the skillet with the chicken. Stir to combine, then place provolone cheese slices on top. Cover with a lid and let the cheese melt for 1-2 minutes.
  5. Prepare the hoagie rolls:
    Butter the inside of the hoagie rolls and toast them in a separate skillet until golden brown.
  6. Assemble the sandwiches:
    Spread mayonnaise (optional) inside each toasted roll, then fill with the cheesy chicken and pepper mixture. Serve hot.
