  • 6 chicken thighs, skin-on and bone-in
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season chicken thighs with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear chicken thighs, skin-side down, until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove from skillet and set aside.
  • In the same skillet, add mushrooms and cook until tender, about 5 minutes.
  • Add garlic and cook for another minute until fragrant.
  • Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Add dried thyme and rosemary.
  • Stir in heavy cream and bring to a simmer. Return chicken thighs to the skillet.
  • Reduce heat to low, cover, and simmer for 15-20 minutes until chicken is fully cooked and the sauce has thickened.
  • Garnish with fresh parsley and serve.
