  • 1 lb (450g) boneless, skinless chicken breast or thighs, cubed
  • 3 tbsp peanut butter (smooth or chunky)
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1/2 cup chicken broth
  • 1/2 tsp chili flakes (optional, for spice)
  • 1 tbsp cornstarch (optional, for thickening)
  • Green onions and sesame seeds for garnish

Instructions

  • Heat sesame oil in a skillet or wok over medium heat. Add cubed chicken and cook until browned and cooked through. Remove from skillet.
  • In the same skillet, sauté garlic and ginger for 1 minute until fragrant.
  • Mix peanut butter, soy sauce, hoisin sauce, rice vinegar, honey, and chicken broth in a small bowl. Add the mixture to the skillet.
  • Stir until the sauce is smooth and creamy. Add chili flakes for spice if desired.
  • If the sauce is too thin, mix cornstarch with 1 tbsp water and stir into the skillet to thicken.
  • Return the chicken to the skillet, tossing to coat evenly with the sauce. Cook for another 2-3 minutes.
  • Garnish with green onions and sesame seeds. Serve hot over steamed rice or noodles.

  • Adjust the sweetness and spice to taste by adding more honey or chili flakes.
