  • 2 lbs beef chuck, cut into 2-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 large carrots, sliced
  • 2 cups beef broth
  • 1 cup grape or pomegranate juice
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • 8 oz mushrooms, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Sear the beef cubes until browned on all sides. Remove and set aside.
  • In the same pot, sauté onions and garlic until fragrant. Add carrots and cook for 3 minutes.
  • Stir in tomato paste, thyme, and bay leaves. Return beef to the pot.
  • Pour in beef broth and grape juice. Bring to a boil, then reduce heat and simmer for 1.5–2 hours until beef is tender.
  • Add mushrooms in the last 30 minutes of cooking. Adjust seasoning with salt and pepper.
  • Remove bay leaves, garnish with fresh parsley, and serve warm.
