This Classic Macaroni Salad recipe is a creamy, tangy, and crowd-pleasing side dish made with elbow macaroni, crunchy vegetables, and a flavorful mayonnaise-based dressing. It's a must-have at summer BBQs, potlucks, or family gatherings.

Ingredients

Scale
  • 2 cups elbow macaroni, uncooked

  • 1 cup mayonnaise

  • 1 tablespoon yellow mustard

  • 2 teaspoons apple cider vinegar

  • 1 teaspoon sugar

  • Salt and black pepper to taste

  • 1/2 cup diced celery

  • 1/2 cup diced red bell pepper

  • 1/4 cup diced red onion

  • 1/4 cup chopped dill pickles or relish

  • Optional: 2 hard-boiled eggs, chopped

  • Optional: paprika for garnish

Instructions

  1. Cook macaroni according to package directions. Drain and rinse under cold water. Let cool.

  2. In a large mixing bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.

  3. Add cooled macaroni, celery, bell pepper, red onion, pickles, and chopped eggs (if using). Mix until well combined.

  4. Cover and refrigerate for at least 1 hour before serving.

  5. Garnish with paprika if desired. Serve chilled.

Notes

  • Best when made a day ahead to allow flavors to blend.

  • Use Greek yogurt instead of mayo for a lighter version.

  • Add a dash of hot sauce for a spicy kick.
